I've been harvesting up like a fiend, and was entertaining last weekend. Being as I didn't want to buy anything (or much of anything), I pulled together what I could find from the garden and pantry and made due.
1st Dish: I made beet salad. But, I've made (and you've read) that before, so I won't bore you with those details again. But, for the record, it's good EVERY time you make it. And people don't seem to bore of it, so double bonus.
2nd Dish: Yellow squash casserole.
Ingredients:
3 medium squash, sliced
1/2 stick of butter (4T), melted
1 small sweet onion, diced
about 20 saltines, crushed
Directions:
Saute onions. Boil squash until al dente (not soft).
Combine veg with about 1/4 of the cracker crumbs.
Place in greased 8x8 dish. Top with remaining crackers, then top with melted butter.
Bake at 350 until the crackers turn golden. Everything is already cooked, so it's just to combine the flavors so nicely.
3rd Dish: Cucumber, Tomato, and Feta Salad
Ingredients:
4-6 Roma Tomatoes, diced large-ish
2 Cucumbers, diced large-ish
1/2 C Feta crumbles
Dressing Ingredients:
2 T red wine vinegar
3 T olive oil
Salt and Pepper to taste
Directions:
Combine first three ingredients in a bowl.
Whisk dressing ingredients.
Toss everything together just before serving.

Caprese Salad Skewers
There's not much to a Caprese salad, but I wasn't in the mood for finding forks. Luckily, I found this idea at Terri's Table!
All you need is fresh mozzarella, grape (or cherry) tomatoes, and fresh basil leaves for the skewers.
If your basil leaves are large enough, you can skewers them on either side of your tomato and mozzarella cube. If not, make due the best you can. If you've grown your own basil, it's easy to pick the right size, but when shopping at the market, you need to just go with the flow. No biggie. Make it the best you can.
When you're done, just lightly drizzle the skewers with olive oil and then balsamic vinegar. Instant hit and easy to eat.

Happy 100 Posts!

And then life gets in the way. Family obligations and short planning for dinner equals one FABULOUS pasta dish that takes very little time to make, is low fat(ish), and fairly flavorful! Maybe we knew I was fated to have a pasta dish as my 100th any way. We know how I love it!

Here's what I did...
Ingredients:
1 box of Ziti pasta (make as you normally would a box of pasta)
1ish T of Olive Oil

1 pkg of Jennie O Smoked Turkey Sausage (angle sliced)
2 bell peppers (chunky diced)
about 1/2 of a small onion (diced)
2 cloves of garlic (pressed/diced)
Ground Pepper and Italian Seasoning to taste
3 T of grated Asiago Cheese
1/4 C of pasta water reserved
Heat olive oil, saute onions, garlic, and bell peppers. Add seasonings.
Add Smoked Sausage and heat through.
Once the Ziti is prepped, mix in the drained pasta to the cooked through meat and veg.
Toss, and if it looks dry, add a little pasta water. Sprinkle with cheese, then serve with your favorite crusty bread and enjoy.
That's it. Really.
Yep. It seems as though my 100th blog entry is just like every other entry. Simple, easy, and new (for me). So here's to the next 100. Here's to new dinners and desserts, and maybe more breakfasts and brunches too. This has been an awesome 8 months, and here's to many, many more.
